In Penang, the humble You Tiao, otherwise known as “Yau Char Kwai,” has been given an appetising makeover by Mr Tan of Te Chang You Tiao Wang Enterprise. His version of deep fried Chinese crullers originated from Kuala Perlis, and they are similar to the normal crullers, except they are extremely long – around 14 inches!
The long crullers are deep fried in a specially made huge rectangular fryer till golden brown. Once split open, its soft inner side is filled with freshly prepared ingredients. The filler selection is extensive, with almost any choice under the sun for customers to choose from, including a variety of savoury and sweet filling, indeed a great innovation from the original version.
The common savoury fillings are the tuna mayonnaise, sausage mayonnaise and the chicken floss mayonnaise. Besides the savoury You Tiao, Mr Tan provides an excellent spread of sweet selections. The more typical ones include honey butter, kaya butter and peanut butter.
Besides the long crullers, Mr Tan also makes a “Black & White Sesame Twins” (a horseshoe-shaped sweetened cruller). This version resembles the sweet Ma Keok that is commonly sold in Kuala Lumpur. They are then topped with black and white sesame seeds.
The crullers go well with the homemade Black Soya Bean milk which is available either in cold or hot versions. This soya bean milk provides a nice change from the regular soya bean milk and is great for dunking the plain crullers.
