PRAWN PASTE CHICKEN
Recipe:
1kg chicken wing middles
2.5 tbsp prawn paste
2 tbsp oyster sauce
2 to 3 tbsp sesame oil
2 tbsp pepper
3 tbsp rice OR Shaoxing wine
3 tbsp rice flour
3 tbsp cornstarch
Method:
Marinate the chicken wings with the prawn paste, oyster sauce, sesame oil, wine, pepper and both types of flour for a minimum of 5 hours, or overnight for best results.
As it may dry out a little in the fridge, stir in a generous spoonful of rice flour and corn flour, plus a splash of water to refresh the batter.
Heat some oil for deep-frying over medium heat, and deep fry the chicken wings for 3 to 4 minutes until they are golden and cooked-through.
Drain on some kitchen towels and devour immediately, with a squeeze of fresh lime.
