Now before you start accusing us of being elite wine snobs, there is scientific proof to this. Some wine buffs have correlated the level of sulphites (also known as Sulphar Dioxide) to the headache you may experience after consuming wine. Sulphites are a fruit preservative found in wine and dried fruits. Cheap wines generally have higher sulphite content than expensive and organic wines. Some of us will be more sensitive to sulphites and the higher levels will cause headaches for the selected few. However the real culprit of hangovers comes from this impurity called cogener – a by-product of the fermentation process. Cogeners are more concentrated in low quality wines and dark alcohols.
